Step 1
To make this delectable biryani, begin by properly cleaning the rice and soaking it for 30 minutes. Then, under running water, wash the coriander, mint, green chilies, garlic, carrot, and onion. Finely chop them all on a clean chopping board. Finally, divide the paneer into tiny cubes and set aside.
Step 2
Now, heat a pressure cooker over a medium temperature. Pour in enough water to cover the cleaned rice. Cook for 2 whistles in a pressure cooker, then fluff with a fork. Then, put the chopped onions, mint leaves, garlic, and ginger paste in a blender. Blend in the peppercorns, coriander seeds, cumin seeds, and lemon juice to make a fine paste.
Step 3
Next, heat Rani Refined Oil in a deep shallow pan over medium heat. When the oil is heated enough, add the cardamom and bay leaves and sauté until fragrant. Then, add 3 tbsp water to the pan and pour in the formed paste. Allow it to cook for a minute after stirring.
Step 4
Pour the cooked rice into the pan and stir to combine. Season with salt and add paneer, green chilies, and carrots. Cook, stirring constantly, until everything is well combined. Finally, place it on a serving plate and serve with curd. Enjoy the flavorful Paneer Biryani!
